Early spring foraging


After hours, the Heartwood staff took some to go for an early spring forage for the Lesser Celandine plant. It has yellow star flowers and will be out in abundance in the next month. We dug up the roots and washed, then boiled them. They tasted similar to new potatoes with a slight bitter edge. It was a first for all three of us and we enjoyed discovering a new and surprising wild food plant.
